Roasted baby marrows with thyme and garlic

These roasted marrows are delicious as a light starter or as a side dish for your main meal.


2 large baby marrows – halved lengthwise
3 cloves crushed fresh garlic
2 teaspoons of chopped fresh thyme
Sea salt and black pepper to taste
1 tablespoon extra-virgin olive oil
Extra olive oil or coconut oil


1. Preheat oven to 200°C.
2. Lightly coat a roasting dish with olive oil or coconut oil
3. Arrange baby marrow halves, flesh side up, on the tray
4. Drizzle olive oil over the baby marrows and season with salt and black pepper
