- 2 ripe avocados
- 1 apple
- 1 tablespoon of lime juice
- 225g cherry tomatoes
- 50g walnuts, chopped
- A bunch of chives
- 1/2 tablespoon extra-virgin olive oil
- Sea salt and black pepper to taste
- Chop or slice the avocado and apple to your liking and place in a large serving bowl. Sprinkle over half the lime juice and toss gently.
- Cut the cherry tomatoes in half and add to the avocados along with the chopped walnuts.
- Whisk together the remaining lime juice and olive oil and drizzle over the avocado salad.
- Garnish with chives and gently toss the salad, being careful not to break up the avocado. Serve immediately.
